Sweet Potato for Seven?

While wandering the grocery store with my friend yesterday, I encountered a sweet potato that was larger than my head (and here is photographic proof in case you don't believe me):

It made me wonder, what on earth would you make with a sweet potato that large, and how long would it take to fully cook? Just some thoughts for now.
